White peony tea is among the top ten famous teas in China, commonly referred to as “the dancer of white tea” or “woman tea”, which is superior among white teas. White peony tea is mainly produced in the Nanping Municipality and surrounding counties, Songxi County, Jianyang City and Ningde City Fuding City in Fujian Province, China.

White peony is not only a famous historical tea within Fujian Province, it is also a popular variety circulating the tea industry, which is not only beautiful and elegant in appearance, but also loveable in taste.

As early as 1920, white peony tea was discovered by tea enthusiasts, and due to the revealed quality, the tea began further production in the Jianyang area, later expanding to Zhenghe, Songxi, and Fuding to name a few. White peony tea leaves are green, and quite plump and wavy in appearance. The buds and leaves are connected with branches and the leaf margins are slightly rolled up, with natural leaf veins, greyish-green in colour. The back of the leaves are covered with warm white hairs, and the leaf edges are slightly rolled towards the back of the leaf.

Five Steps to Making White Peony Tea

Making White Peony Tea1 – Picking

Among the four seasons of the year, spring is the best time to pick white peony tea. In the process of harvesting, special attention will be paid to “one heart and one leaf”. It will be better if the tea farmers can pick the tea buds and young leaves. After picking, the tea farmers spread the tea buds evenly and air-dry them indoors.

Once the tea farmers have finished picking the tea leaves, they are spread out on the water sieve, this step is called “Spread tea leaves”. At this point, overlapping should be avoided as overlapping can cause the harvest to turn black. Direct sunlight should too be avoided by tilting the sieve on a 45 degree angle. It should also be noted that during this process, the tea leaves should not be turned otherwise the damaged leaves will turn red.

Making White Peony Tea3 – Wither

The production process of white peony tea is more complicated than other white tea variants. White peony does not go through frying and kneading production processes. Although there are only two basic procedures of withering and drying, this part of the craft actually requires rigorous experience and technique. Additionally, the quality of white peony tea will be better when withered naturally indoors.

Making White Peony Tea4 – Dry

After withering for 72 hours, the harvest should be left to wait until the moisture content reaches 10% to 20%. It is then spread on an oven rack, continuously processed until about 80% dry, and placed in an oven between 90°C and 100°C for further drying.

Carry out shape selection, removing yellow leaves, wax leaves and other impurities as much as possible. The purpose is to improve the cleanliness and classify grades in accordance to the degree of superiority or inferiority. 3 best brewing methods of white peony tea

Brewing method1 – Soak in a glass

First prepare a 200ml glass of distilled mountain spring water, and mineral water. You can rinse the tea leaves with a small amount of boiling water at about 90 degrees, pour it out, and then brew it with hot water. The tea leaves set off the tender green buds in the water, which bloom gracefully and slowly, like buds that are about to bloom. The colour of the tea is transparent apricot yellow, the bottom of the leaves are light grey, and the veins are reddish.

Brewing method2 – Use a “big pot” to soak

The ratio of tea to water is 1:40, for example, 2.5 grams of white peony tea is placed in a 100ml teapot, and it can be increased or decreased according to personal preference. Add 90 degrees of water to 7 to 10 grams of white peony leaves into a teapot, then boil the water to 100 degrees for roughly 45 seconds.
