Using a progressive roasting technique, the tea is first roasted to remove any impurities and reduce the water content, then roasted again to enhance the sweetness of the tea soup and create a restrained and mellow aroma. Most importantly, the tea produced through this gradual roasting method is less likely to upset the stomach and has a lower total caffeine content.
